Se adauga 2-3 linguri bulion si aproximativ jumatate de cana de apa, lasandu-se 1-2 minute la foc mic.&lt;br/&gt;Al doilea morcov, cartoful, cealalta jumatate de ceapa si ardei se vor taia cubulete si se adauga peste ceapa calita, plus cateva cani de apa. Se lasa la fiert, la foc mic. Este bine ca oala sa fie acoperita cu un capac.&lt;br/&gt;In acest timp intr-o alta oala puneti cam un litru de apa la fiert; cand apa va incepe a clocoti inchidem focul dar totodata punem rosiile. Este o modalitate simpla de a putea indeparta pielita mai usor. Dupa ce am indepartat pielita la toate rosiile, le vom taia cubulete.&lt;br/&gt;In oala in care fierb legumele, vom pune si o jumatate de cana de orez, spalat in prealabil. Dupa aprox. 15 minute adaugam si rosiile taiate, de asemeni Delikat, 2 lingurite de zahar si sare dupa gust.&lt;br/&gt;Vom lasa sa fiarba la foc mic inca vre-un sfert de ora, pana cand suntem siguri ca si orezul este fiert. Dupa ce inchidem focul, vom pune putin marar si patrunjel spalat si taiat marunt. Drojdia se freaca cu o lingura de zahar, apoi cu faina oparita (preparata anterior), se presoara faina, se acopera.&lt;br/&gt;Galbenusurile se freaca cu sarea.&lt;br/&gt;Albusurile (4) se bat spuma tare cu 4 linguri de zahar si zeama de lamaie. Celelalte 4 albusuri se lasa nebatute la rece.&lt;br/&gt;Se adauga in galbenusuri zaharul, vanilia, romul, laptele, vanilia, untdelemnul, albusurile, maiaua si restul de faina. Se framanta bine si apoi se lasa sa creasca.&lt;br/&gt;&lt;br/&gt;Pentru crema se bat cele 4 albusuri cu 4 linguri de zahar si zeama de lamaie. Pentru fiecare albus se pun 2 linguri nuci macinate si se adauga si coaja de lamaie rasa.&lt;br/&gt;&lt;br/&gt;Vom taia bucati de aluat (in functie de tavile avute); fiecare bucata o vom intinde ca o foaie, peste care punem compozitia cu nuca. Putem presura si cateva stafide si bucatele de rahat. Rulam apoi foaia de aluat, lipim capetele si o punem in tava. Se va lasa iar sa creasca vreo juma de ora. Cu un ou batut, ungem fiecare cozonac, putem presura si mac deasupra. Apoi il dam la cuptor, la foc mic, pentru a-i lasa timp sa creasca si in cuptor. In general, coptul dureaza cam o ora. Cand e doar putin calduta, se adauga drojdia dizolvata in apa calduta separat. Se va lasa acest amestec cca juma de ora (vom observa ca va incepe sa faca bule), timp in care pregatim celelalte ingrediente. Vom incalzi putin laptele, adaugam untul, smantana si zaharul; se mesteca pana se dizolva zaharul (puteti folosi zahar praf). In alte 2 vase vom separa galbenusurile de albusuri. Albusurile se bat bine pana se fac spuma.&lt;br/&gt;&lt;br/&gt;In ligheanul cu drojdie (acel amestec de la inceput) se adauga laptele cald si galbenusurile. Se amesteca bine cu mana, adaugandu se pe rand si esentele, coaja rasa de portocale. Punem apoi faina, cate putin, mestecandu-se in continuu. Adaugam si o parte din albusuri, in functie de cat de moale e aluatul. Se va incerca sa iasa un aluat mai moale, mai pufos. Vom framanta cam o ora, (este unul din secretele cozonacului pufos si crescut) folosind cate o lingura de ulei din cand in cand. Cand terminam de framantat il lasam la crescut cam o ora. Se taie in cubulete mici. Merele si perele se pot stropi cu praf de scortisoara. Se bat albusurile spuma.&lt;br/&gt;Peste albusurile batute spuma se adauga zaharul, uleiul, apa, galbenusurile si praful de copt stins cu putina zeama de lamaie sau otet. Se adauga merele si perele in compozitie.&lt;br/&gt;&lt;br/&gt;Se unge o tava cu ulei (sau margarina) si se tapeteaza cu faina. Ciupercile se taie felii si se calesc putin in ulei.&lt;br/&gt;Intr-o tava unsa in prealabil cu putin ulei se asaza cartofii decojiti si feliati, ciupercile, ouale fierte si feliate, sare, piper si jumatate din cascaval. Peste toate acestea se toarna un sos alb din lapte, faina si smantana (iaurt).&lt;br/&gt;Deasupra se pune si restul de cascaval. Se adauga cate un galbenus si se freaca bine dupa fiecare. Apoi se pune laptele, praful de copt, zaharul vanilat si faina. La sfarsit se adauga cele 3 albusuri batute spuma. Se toarna in tava unsa si tapetata cu faina. Peste compozitie se pun fructele rupte in jumatate si cu partea dinspre samburi in sus. Se va bate bine daca este de porc sau vita (pieptul de pui e oricum foarte fraged). Se poate condimenta si apoi lasa o ora la rece. Intr-un vas se va bate oul, se va adauga putina sare si piper, faina si daca este nevoie si 1-2 linguri de apa pana iese un aluat ca pentru clatite. Vom lua cate o bucatica de carne si o vom inmuia in alauat, dupa care o vom pune intr-o tigaie cu ulei incins. Se procedeaza la fel cu toata carnea. Ceapa si patrunjelul se taie marunt; rosiile se taie felii iar usturoiul se curata si se taie rondele. &lt;br/&gt;Pestele se despica, se eviscereaza, i se indeparteaza capul si se spala bine. Se taie bucati potrivit de mari. Intr-un vas se asaza ceapa, morcovii, patrunjelul si rosiile, ardeii, usturoiul. Deasupra se pun bucatile de peste pe care le-am sarat in prealabil. Se adauga foile de dafin si boabele de piper si mustar. Punem un amestec de 50 ml de vin si 50 de ml de apa si dam vasul la cuptorul incalzit. &lt;br/&gt;Se lasa cam o ora la foc potrivit. Cand incepe sa fiarba, se va lua spuma de deasupra. In acest timp se va taia varza, fie folosim o razatoare, fie la robotul de bucatarie (sau asemeni unei cepe, taiem cu cutitul foarte marunt, ca pentru o salata).&lt;br/&gt;Asadar, cand carnea a ramas fara spuma, adaugam si varza marunta. O ceapa o vom taia si cali in ulei separat, adaugandu-se spre final si gogosarii taiati apoi bulionul. Cealalta ceapa, gogosarul ramas si morcovii vor fi taiati si pusi in oala cu varza.Se va adauga si ceapa calita.&lt;br/&gt;Sfatul meu e sa fierbeti cu oala acoperita si apa nu foarte multa, cat sa acopere varza si carnea. Nu uitati sa puneti si putina sare, piper (puteti folosi si piper boabe) si cateva frunze de dafin uscate, din comert. In momentul cand incepe sa clocoteasca se va lua spuma de deasupra. Cand apa ramane curata se vor adauga legumele taiate. Se mai poate adauga si o jumatate de ceapa taiata si calita in ulei separat si stinsa cu bulionul; daca nu doriti asa, puneti bulionul (sau 2 rosii decojite si taiate cubulete) direct in oala.&lt;br/&gt;Cand e aproape gata puteti adauga putina fidea si zeama de lamaie sau borsul acru de putina; de asemeni sare, piper sau delikat, dupa gust. Dupa ce a fiert si fideaua adaugati verdeata taiata. Eu folosesc si putin marar si leustean pentru aromele sale. Ciupercile le taiati, apoi le puteti pune cu orezul la fiert sau daca va place le caliti putin in prealabil, eventual cu o ceapa mica, dupa gust. Eu adaug si o lingura de margarina sau ulei de la friptura care o pregatesc cu acest pilaf. Se pune sare si putin piper. Dupa ce e gata orezul si inchid focul, adaug si putin patrunjel taiat, ii da un gust aparte. Tigaia o las acoperita, ca ei sa stea in aburii proprii si sa se rumeneasca intr-un final. In acest timp fac mujdei din usturoi. Eu pun si 2 linguri de iaurt. Cine doreste poate adauga si Ketchup in mujdei. Cand e gata totul puteti pune mujdeiul peste ficateii fierbinti si sa mai lasati 5 minute tigaia acoperita sau puteti pune separat in farfurie. De obicei eu o las asa cateva ore, asta daca nu ma grabesc. Ceapa si gogosarii ii taiem felii, apoi pe niste tepuse vom pune pe rand carne, ceapa si gogosari. Puteti adauga si felii de rosii.&lt;br/&gt;Se vor coace la gratar, la un foc mic, pentru a nu se arde legumele din prima si carnea sa nu fie coapta bine. Se pot folosi mai multe metode: fie in cuptor, intr-o tava, fie la ochiul de aragaz, fara tigaie si cu focul foarte mic, fie intr-o tigaie cu ulei si acoperita cu un capac. Dupa coacere, se vor lasa putin intr-un vas acoperit pentru a se inmuia coaja apoi se vor curata. Vinetle curatate le punem intr-o farfurie vreo jumatate de ora , chiar mai mult, pentru a se scurge de apa din ele. Cand sunt gata, vom taia fiecare vanata foarte marunt si le vom pune intr-un vas. Eu folosesc si mixerul. Apoi adaugam ceapa taiata. Ca sa nu se crape este bine sa nu fie foarte reci si sa fie fierte la foc mic; iar ca sa ramana galbenusul in centrul oulului, se poate sa folosim o lingura si sa invartim incet oualele in oala cand fierb.&lt;br/&gt;Dupa ce s-au racit, le curatam de coaja apoi fiecare ou il taiem in jumatate. Galbenusurile le punem intr-un vas, peste care vom adauga pateul, mararul taiat foarte marunt, putina sare si o lingura de margarina ca sa se lege mai bine compozitia. Daca doriti, puteti pune mai putine galbenusuri fierte. Va rezulta o pasta cu care vom umple albusurile fierte ramase. Este bine sa ii lasati sa se raceasca apoi ii taiati cubulete mici si ii puneti intr-un vas. Peste acestia se va adauga ceapa taiata marunt, maslinele si maioneza. Eu fac in general maioneza acasa dintr-un galbenus fiert, unul crud, o lingura de mustar, putina zeama de lamaie si ulei, amestecandu-le bine cu mixerul. Se pot adauga si 2-3 linguri de smantana sau iaurt, depinde de cat de consistenta este branza. Trebuie sa iasa ca o pasta mai groasa, sa poata fi unsa o felie de paine.&lt;br/&gt;Gogosarii se spala apoi li se inlatura semintele. Fiecare gogosar este taiat in 4-5 parti, in functie de forma si dimensiunile dorite, dupa care fiecare particica este umpluta cu branza obtinuta anterior. Spre final se adauga bulionul, apoi morcovul ras, patrunjelul si mararul, carnea, orezul ales si spalat, oul, faina, condimente dupa gust. Se amesteca bine.&lt;br/&gt;Frunzele de vita de vie sau varza se pun intr-o tigaie cu apa fierbinte pentru a fi mai moi la format sarmalutele. Se aseaza intr-o oala pentru fiert,se adauga apa (eu pun si cateva linguri de bors acru si sare dupa gust) si daca doriti si 2-3 linguri de bulion. Spre final se adauga bulionul, apoi morcovul ras, patrunjelul si mararul, carnea, orezul ales si spalat, oul, faina, condimente dupa gust. Se amesteca bine.&lt;br/&gt;Ardeii se spala, se decupeaza cotoarele, se inlatura semintele dupa care se vor umple luand cu lingura din compozitia obtinuta anterior. Fiecare ardei se acopera cu partea de cotor curatat, se aseaza intr-o oala pentru fiert. De obicei eu pun pe fundul oalei cateva frunze de vita de vie sau varza, depinde si de oala. In apa pentru fiert eu adaug si cateva linguri de bors acru si sare dupa gust. Se pot adauga si 2-3 linguri de smantana sau iaurt, depinde de cat de consistenta este branza. Trebuie sa iasa ca o pasta mai groasa, sa poata fi unsa o felie de paine. La sfarsit adaugam si albusurile batute spuma. Eu am pus si o lingurita de coaja rasa de lamaie/portocala. Se dau la rece intr-un vas fara apa de la fiert. Se va adauga ceapa tocata (ceapa verde da un gust mai bun), sarea si putin marar (dupa preferinta). Se adauga ouale batute, untul, drojdia dizolvata, sarea si zaharul vanilat. Se amesteca, apoi se pune faina framantandu-se bine un aluat pufos. Se lasa la dospit cam o ora (depinde si de temperatura camerei).&lt;br/&gt;&lt;br/&gt;BRANZA&lt;br/&gt;branza de vaci&lt;br/&gt;2 oua&lt;br/&gt;150 g zahar&lt;br/&gt;50 g stafide&lt;br/&gt;In timp ce aluatul creste, putem prepara branza. Aceasta se amesteca cu oualele, zaharul, stafidele si esente. Eu pun si coaja rasa de lamaie.&lt;br/&gt;&lt;br/&gt;Se va lua cate o bucatica mica de aluat. Se va intinde ca o foaie, peste care vom pune cate 2 linguri din branza preparata. Se va lipi aluatul (a se vedea foto) si se va pune intr-o tava unsa. Cand tava este plina mai lasam un sfert de ora apoi vom unge fiecare placinta cu un ou batut separat. Se poate presura putin mac.&lt;br/&gt;Tava se va da la cuptor, la foc mic la inceput, apoi foc moderat, pentru aproximativ o ora.&lt;br/&gt;Dupa ce am scos tava, se pot unge cu un sirop din apa si zahar apoi se presoara zahar pudra. Se va bate bine daca este de porc sau vita (pieptul de pui e oricum foarte fraged). Se poate condimenta si apoi lasa o ora la rece. Intr-un vas se va bate oul, se va adauga putina sare si piper, faina si daca este nevoie si 1-2 linguri de apa pana iese un aluat ca pentru clatite. Vom lua cate o bucatica de carne si o vom inmuia in alauat, dupa care o vom pune intr-o tigaie cu ulei incins. Se procedeaza la fel cu toata carnea. Se scot din tigaie intr-o farfurie, la fundul careia am pus 2-3 servetele (au rolul de a suge din uleiul scurs din snitele). Dupa ce s-a racit se adauga oul batut si cascavalul taiat bucatele. Compozitia obtinuta se va intinde peste fasia de carne. Aceasta se va rula iar la sfarsit folositi bucati mici de sfoara sa o legati. Se poate unge cu ou deasupra dupa care se ta la cuptor la foc moderat pentru o ora, depinde cat de groasa iese rulada. Pentru a nu se lipi de tigaie la copt eu folosesc si ulei in aluat. Cu un polonic se toarna treptat aluatul in tigaie pana terminam de copt toate clatitele. Se pun una peste alta, pentru a ramane moi si calde. Apoi se umple fiecare clatita cu dulceata preferata. Se amesteca apoi se pune faina si se framanta un aluat. Daca trebuie mai adaugati lapte, e in functie de tipul de faina. Se poate folosi ulei la framantat.&lt;br/&gt;Se va lasa la dospit cam o ora. Se imparte aluatul in 2 parti;fiecare parte va fi reimpartita in 3 parti. Acestea se vor intinde ca pentru colacei mai grosi, apoi se vor impleti. Se vor folosi tavi de chec sau cozonac. Se pot lasa inca o jumatate de ora sa creasca in tavi. Vom bate un ou si cu o pensula vom unge painile dupa care putem presura mac sau susan. In jumatate din formele rezultate se va pune cate putin gem apoi vor fi acoperite si lipite cu bucatile ramase goale. Intr-o tigaie cu ulei incins se pun la copt gogosile umplute, deja formate. Dupa ce s-a scurs bine zeama din ele se toaca, se amesteca cu ceapa si putina sare. Se adauga toate celelalte. Se fierbe cam 2 ore si jumatate. E bine sa acoperiti oala cu capac. Se lasa la rece cam o ora. Se ia cate o bucata de aluat, se intinde o foaie cam de 0,5 cm grosime. Dupa fierbere se lasa la scurs si la racit. Intr-o tava se aseaza un rand de fasole, un rand de felii de oua fierte tari, felii de rosii curatate si verdeata tocata marunt. Se va continua cu alt strat de fasole si legume pana se termina. Deasupra se va pune smantana in care s-a adaugat faina si putina sare si se da la cuptor pentru vreo 20 minute. Se presoara cu putina sare si se va lasa deoparte cam un sfert de ora. Se spala orezul si se pune la fiert cu 3 cesti de apa si condimente (gen Delikat). Ceapa si ciupercile curatate si taiate se vor cali in ulei incins, dupa care se va adauga orezul fiert si verdeata tocata.&lt;br/&gt;Se va incepe a se umple jumatatile de dovlecei cu aceasta compozitie si se aseaza intr-o tava. Dintr-o cana de apa si condimente se face o supa si se toarna peste dovlecei, apoi se dau la cuptor pentru circa jumatate de ora. Cand sunt gata se adauga smantana si se servesc calzi. Separat se fierbe uleiul,zaharul, otetul, bulionul, foi dafin, sare, piper dupa gust. Apoi  carnea toccata se va amesteca cu legumele tocate , galbenusurile si albusurile batute spuma, condimente. Compozitia rezultata se va aseza in tava de chec(mai bine 2 tavi de chec mai mici)  cu oua fierte tari pentru décor. Se toarna compozitia obtinuta intr-o tava sau intr-o forma de tort unsa si tapetata cu faina. Se coace blatul la foc potrivit aproximativ 30 minute.&lt;br/&gt;&lt;br/&gt;BLATUL 2&lt;br/&gt;5 albusuri&lt;br/&gt;5 linguri zahar&lt;br/&gt;5 linguri faina&lt;br/&gt;1 ceasca (de cafea) cu nuca&lt;br/&gt;1 ceasca (de cafea)cu bucatele de ciocolata&lt;br/&gt;1 ceasca de stafide&lt;br/&gt;1 ceasca de visine din compot (sau visinata)&lt;br/&gt;SE bat albusurile cu zaharul , se incorporeaza pe rand faina, ciocolata maruntita, nuca, visinile fara samburi si stafidele. Dup ace s-a copt primul blat, se scoate pe un support de lemn, se unge forma sau tava si se va coace al doile ablat la foc potrivit pentru vreo 30 minute.&lt;br/&gt;&lt;br/&gt;CREMA&lt;br/&gt;5 galbenusuri&lt;br/&gt;5 linguri lapte&lt;br/&gt;400 g unt&lt;br/&gt;10 linguri zahar pudra&lt;br/&gt;3 linguri cacao&lt;br/&gt;Se freaca bine galbenusurile cu zaharul pana devin spumoase, se adauga cacaoa si laptelesi se fierbe compozitia la foc mic pana se ingroasa. Se lasa la racit apoi se incorporeaza treptat untul batut spuma si se da la rece iar.&lt;br/&gt;&lt;br/&gt;GLAZURA:&lt;br/&gt;8 linguri zahar pudra&lt;br/&gt;4 linguri cacao&lt;br/&gt;3-4 linguri apa fiarta, ulei&lt;br/&gt;Se amesteca zaharul cu cacaoa, apa fiarta si uleiul pana se obtine o glazura.&lt;br/&gt;&lt;br/&gt;Se asambleaza tortul: se taie blatul 1 in 2 parti pe care le insiropam cu zeama de compot (sau alt sirop preferat). Se aseaza pe un platou una din cele 2 parti, desupra jumate din crema; apoi blatul 2 peste care punem crema de cacao ramasa. Se continua cu cealalta parte din blatul 1 acoperita in cele din urma cu glazura. Se pune apoi faina, margarina topita, se framanta bine si se lasa aluatul la crescut (dospit). In acest timp se curata portocalele , se taie felii, se pun intr-o cratita cu 2 linguri de zahar si se pun pe foc mic 3-4 minute. Dupa ce s-a topit  zaharul, se scot bucatile de portocale pe o farfurie si se pastreaza siropul pentru glazura.&lt;br/&gt;Aluatul se va intinde ca o foaie, se pun ¾ din portocale  si un sfert din ciocolata rupta bucati mai mari, se ruleaza si se pune totul intr-o forma de savarina, unsa si tapetata cu faina. Se decoreaza prajitura  cu bucatile de portocale ramase, stropite cu lichior si se va da apoi la cuptor, la foc potrivit pentru vreo 40 minute.&lt;br/&gt;In acest timp se topeste in siropul de portocale ciocolata ramasa. Aluatul se da la cuptor. Dupa racire se taie blatul in 2, se insiropeaza cu siropul de caramel.&lt;br/&gt;&lt;br/&gt;CREMA:&lt;br/&gt;500 ml lapte&lt;br/&gt;4 linguri zahar&lt;br/&gt;5 linguri faina&lt;br/&gt;1 cana zahar&lt;br/&gt;1 pachet unt&lt;br/&gt;&lt;br/&gt;Se fierbe laptele cu 4 linguri de zahar si faina pana se ingroasa ca o crema. Se da la rece. In acest timp se freaca untul cu  zaharul din cana si se adauga cate o lingura din crema racita. Se asambleaza tortuletul, se lasa cu crema deasupra (la aceasta eu am adaugat si un nes). Rezulta o coca care se pune intr-o tava unsa. Deasupra se pun fructele fara samburi, este bine ca acestea sa fie trecute prin faina, pentru a ramane deasupra tartei. Cine doreste, poate pune desupra si bucatele foarte mici de ciocolata menaj. Va rezulta o crema gustoasa.&lt;br/&gt;&lt;br/&gt;SIROP:&lt;br/&gt;&lt;br/&gt;Din 4 linguri cafea cu 150 ml apa veti face o cafea; puteti adauga zahar daca doriti. Eu nu am mai pus. Zaharul se pune in apa si se da in clocot pana ce rezulta un sirop. Acesta se adauga in vasul cu albusurile spuma, amestecandu-se. Se adauga apoi galbenusurile, unul cate unu, uleiul si faina.Jumatate din coca se pune in tavi, cealalata jumatate se amesteca cu cacao si se pune peste coca alba.
